Ingredients:
1 pack @qetoe_foods fettuccine
500g chicken breast sliced
500g mushrooms sliced
1 onion finely diced
1 tbs chicken seasoning of choice
Drizzle olive oil for frying
1 heaped tbs butter
1 tbs garlic mince
1 cube chicken stock dissolved in 3/4 cup water
1/3 cup white wine (can omit but sub for 1/4 cup water)
500mls thickened cream
1 cup shredded Parmesan
Method:
1. In a fry pan add oil and fry onion until fragrant. Add the chicken + seasoning. Once cooked, set aside.
2. In the same pan add the butter, garlic, mushrooms and cook for a few minutes. Add the chicken back in & mix.
3. Pour in chicken stock + wine & simmer for a few minutes.
4. Add in the cream & Parmesan, simmer until thickened.
5. Whilst it’s simmering, cook your pasta as per packet instructions. Drain.
6. Add pasta in the chicken & mushroom sauce and stir gently to combine.
Plate up and top with more Parmesan if you like.
