Low Carb Garlic Butter Shrimp with Qetoe Rice
Ingredients (Serves 2)
- 200g Qetoe Low Carb Rice, steamed
- 250g shrimp (peeled and deveined)
- 3 tablespoons unsalted butter
- 3 garlic cloves, minced
- 1 tablespoon olive oil
- 1/2 teaspoon paprika
- Juice of 1/2 lemon
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions

Cook the Qetoe Rice:
Prepare the Qetoe Low Carb Rice according to the package instructions and set aside. -
Sauté the Shrimp:
Heat olive oil and 2 tablespoons of butter in a large skillet over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant. -
Season and Cook:
Add the shrimp to the skillet, season with salt, pepper, and paprika, and cook for 2-3 minutes on each side until pink and fully cooked. -
Add Lemon Butter:
Reduce the heat to low and squeeze fresh lemon juice over the shrimp. Stir in the remaining tablespoon of butter until melted and the sauce is smooth. -
Combine with Rice:
Toss the steamed Qetoe rice into the skillet with the shrimp and gently mix until the rice is evenly coated in the garlic butter sauce. -
Serve and Garnish:
Transfer the garlic butter shrimp and rice to plates or a serving bowl. Garnish with freshly chopped parsley and enjoy warm.
Tips:
- For added spice, sprinkle some red pepper flakes while cooking the shrimp.
- Customize with extra veggies like spinach or zucchini for a more filling dish.
