Whip up this easy sausage and pepper frittata in just 40 minutes! Packed with eggs, sausage, peppers, and melty cheese, it's the perfect low-carb breakfast, brunch, or dinner option.
Ingredients
- 12 eggs
- 1/2 cup heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
-
225g sausage (your favorite kind!)
- 2 cups of peppers, sliced or chopped
- 1 cup shredded cheese
Directions
Preheat your oven to 350°F (175°C).Soften the peppers: Pop them in the microwave for about 3 minutes to give them a head start.Cook the sausage: Heat up a 12-inch cast iron skillet (or any oven-safe skillet) and brown the sausage. Once cooked, set it aside.Mix it up: In a bowl, whisk together the eggs, cream, salt, and pepper until smooth.Cook the eggs: Pour the egg mixture into the same skillet (no need to wash it—hello, extra flavor!) and let it cook for 3-5 minutes. You’ll know it’s ready when the edges start to set.Bake it: Slide the skillet into the oven and bake for 8-15 minutes. Prefer a drier crust? Leave it in for 15 minutes. Want it moist? Check it at 8 minutes.Top it off: Take the skillet out and sprinkle on the cooked sausage, softened peppers, and cheese.Broil: Place it under the broiler for about 3 minutes, just until the cheese is melty and golden.Let it rest: Remove from the oven and let the frittata sit for 5 minutes to settle before slicing.
