This easy, protein-packed frittata is loaded with flavorful Italian chicken sausage, creamy cottage cheese, and nutrient-rich spinach. It’s baked to perfection in just minutes, making it a quick, low-carb meal for breakfast, brunch, or even dinner.

Ingredients
- Cooking spray
- 1 Italian chicken sausage link (casings removed)
- 8 large eggs
- ½ cup 1% cottage cheese
- ½ cup grated Pecorino Romano or Parmesan cheese
- 1 cup chopped baby spinach
- ¾ teaspoon kosher salt
- Freshly ground black pepper, to taste
Directions
- Preheat & Prep:
- Preheat your oven to 350°F (175°C). Adjust the oven rack to the second highest position. Lightly coat a 10-inch oven-safe skillet with cooking spray. Mix the Eggs:
- In a medium bowl, whisk together the eggs, cottage cheese, Pecorino, spinach, salt, and black pepper. Set aside. Cook the Sausage:
- Heat the skillet over medium heat and add the sausage. Break it into small pieces using a wooden spoon and cook until browned and fully cooked (about 4 minutes). Assemble the Frittata:
- Pour the egg mixture into the skillet, stirring slightly to distribute the ingredients evenly. Let it cook for 1 minute to allow the bottom to set. Bake to Perfection:
- Transfer the skillet to the oven and bake until the top is set, about 16–18 minutes. Serve & Enjoy:
- Carefully slide the frittata onto a cutting board and slice it into 4 wedges. Serve warm with a fresh salad or whole-grain bread, if desired.
