- 2 cloves garlic, thinly sliced
- 1 large yellow onion, thinly sliced
- 6-8 cups fresh baby spinach leaves (about 2 bunches, packed with nutrients)

- 1/4 cup heavy cream
- 5 eggs
- 1 lemon (zested, for garnish)

Directions
- Sauté Aromatics: Preheat your oven to 400°F (200°C). Heat oil in a large cast iron skillet over medium heat. Add garlic and onion, cooking until golden and fragrant (about 10 minutes).
- Wilt Spinach: Stir in crushed red pepper and a pinch of salt. Add spinach in batches, stirring each time until wilted (this will take 2-3 minutes per batch). Once all the spinach is in, season again lightly with salt.
- Add Cream and Eggs: Pour in the heavy cream and stir gently to coat the spinach evenly. Make 5 small wells in the spinach mixture and crack an egg into each. Sprinkle each egg with a pinch of salt.
- Bake: Transfer the skillet to the oven and bake for about 5 minutes, or until the egg whites are set but the yolks are still soft. Keep an eye on it to prevent overcooking.
