Ingredients:
- 2 sachet of Qetoe Low Carb rice
- 4 cups chicken or vegetable broth
- 1/2 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup sliced mushrooms
- 200g sausage mince
- 1/4 cup grated parmesan cheese
- 1 Tablespoon of butter
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions:
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic, and sauté until the onion is translucent.
- Add the sausage mince and cook until browned, breaking it up into small pieces as it cooks.
- Add the mushrooms and cook until they are tender.
- Add the Qetoe Rice and cook for 2 minutes, stirring constantly.
- Add 1/2 cup of broth at a time, stirring constantly until the rice has absorbed all the liquid before adding more. Continue this process until all the broth has been absorbed and the rice is cooked through.
- Stir in the parmesan cheese and butter. Season with salt and pepper to taste.
- Serve hot with additional grated parmesan cheese on top. Enjoy!
