Ingredients:
- 500g (1 pound) beef strips, cut against the grain
- 2 packets of Qetoe low carb noodles
- 250g (9 ounces) mushrooms, thickly sliced
- 150g (5 ounces) snow peas or sugar snap peas, strings and trimmed
- 1 brown onion, thickly sliced
- 1 spring onion/green onion, cut into 5cm (2") long pieces
- 2 cloves garlic, minced
- ½ tablespoon dark soy sauce
- 1 teaspoon brown sugar
- ¼ teaspoon sesame oil
- 2 tablespoons neutral-tasting oil (e.g., canola, sunflower)
- Black pepper
Velveting Beef Marinade:
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon shaoxing wine
- 1 tablespoon neutral-tasting oil
- 1 tablespoon cornstarch
- 1 clove garlic, minced
- Black pepper
Instructions:
- In a bowl, combine the beef with the velveting beef marinade ingredients. Mix well, cover, and refrigerate to marinate for at least 15 minutes. For best results, use your hand to mix and massage the marinade into the beef.
- Cook the Qetoe low carb noodles according to the package instructions. Usually, this involves soaking them in boiling water for a couple of minutes.
- Heat 1 tablespoon of oil in a large non-stick pan over high heat. Add the brown onions, spring onions, and minced garlic. Sauté for about 45 seconds until the garlic turns lightly golden.
- Push the onion mixture to the sides of the pan to make room for the beef. Add the marinated beef, spreading it out into a single layer. Sear on high heat until each side caramelizes. This should take about 1 minute per side. The beef should be 70% to 80% cooked. Transfer the beef to a plate or bowl and set it aside.
- In the same pan (no need to wash), sauté the mushrooms with the remaining tablespoon of oil over high heat until they become lightly browned and caramelized. This should take about 3 minutes.
- Add favourite veggie and stir-fry for an additional minute.
- Add the Qetoe low carb noodles, dark soy sauce, brown sugar, and sesame oil to the pan. Toss everything together over high heat, ensuring that the seasoning is well distributed among the noodles. This should take about 45 seconds. You can use two spatulas for easy tossing.
- Add the cooked beef and onion mixture back into the pan. Season with black pepper and toss everything together for about 1 minute.
- Optional: Sprinkle with toasted sesame seeds and finely sliced spring onions before serving.
