Low-Carb Qetoe Noodles with Peanut Sauce & Green Beans | Quick & Healthy Recipe

 

  1. Prepare the Noodles and Green Beans
    Bring a large pot of salted water to a boil over high heat. Once boiling, add the Qetoe noodles and green beans. Cook for 3 minutes, or until the green beans are bright green and the noodles are tender. Drain and set aside.

  2. Make the Sauce
    Heat a large skillet over medium-high heat. Add:

    • 1 tablespoon sesame oil
    • 3 tablespoons soy sauce
    • 1 tablespoon sambal oelek
    • 1 tablespoon brown natural sweetener
    • 2 tablespoons peanut butter
    • 1 teaspoon grated ginger
    • 2 cloves minced garlic
    • 1/4 cup vegetable stock

    Stir the ingredients to combine and bring to a simmer.

  3. Combine Everything
    Once the sauce is simmering, add the Qetoe noodles and green beans back to the skillet. Cook, stirring often, until the sauce is absorbed, about 3 minutes. Add chopped green onions and cilantro, stirring to combine.

  4. Serve and Garnish
    Transfer the noodles to a large platter. Top with:

    • Sliced green onions
    • Fresh cilantro
    • Sesame seeds
    • Crushed peanuts
