Garlic Prawns in a Tomato Sauce

200g Qetoe Organic Low Carb Fettuccine
500g large green prawns, peeled and tails left in tact
2-3 tablespoons extra virgin olive oil
1 large brown onion, diced
10 large garlic cloves, finely sliced
1 tablespoon tomato paste
250ml chicken broth
2 teaspoons dried basil
1 teaspoon dried oregano
1 cup parsley leaves
Sea salt and freshly ground pepper
Dried chilli flakes
Optional: parmesan cheese and basil leaves
- Cook Qetoe Fettuccini according to packet instructions. Drain and set aside.
- Heat oil in a large pan, add the onion and sauté until lightly golden.
- Add the prawns and then garlic. Sauté prawns for 1 minute per side.
- Add the tomato paste and caramelize it for 1 minute before adding the chicken broth, basil, oregano, sea salt, and pepper. Bring to boil.
- Once the sauce begins to boil, add the fettuccini, stir it through the sauce and toss to combine. Season with extra salt and pepper if needed.
- Sprinkle chilli flakes and serve. Optional to serve with basil leaves and parmesan cheese.
Make it easy:
- Buy frozen prawns that are already peeled and ready to cook.
- Buy a ready-made no sugar pasta sauce and eliminate the following: tomato paste, canned tomatoes, basil and oregano.
