Low Carb Garlic Butter Shrimp with Qetoe Rice

Ingredients (Serves 2)

  • 200g Qetoe Low Carb Rice, steamed
  • 250g shrimp (peeled and deveined)
  • 3 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon paprika
  • Juice of 1/2 lemon
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Qetoe Rice:
    Prepare the Qetoe Low Carb Rice according to the package instructions and set aside.

  2. Sauté the Shrimp:
    Heat olive oil and 2 tablespoons of butter in a large skillet over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant.

  3. Season and Cook:
    Add the shrimp to the skillet, season with salt, pepper, and paprika, and cook for 2-3 minutes on each side until pink and fully cooked.

  4. Add Lemon Butter:
    Reduce the heat to low and squeeze fresh lemon juice over the shrimp. Stir in the remaining tablespoon of butter until melted and the sauce is smooth.

  5. Combine with Rice:
    Toss the steamed Qetoe rice into the skillet with the shrimp and gently mix until the rice is evenly coated in the garlic butter sauce.

  6. Serve and Garnish:
    Transfer the garlic butter shrimp and rice to plates or a serving bowl. Garnish with freshly chopped parsley and enjoy warm.

  • For added spice, sprinkle some red pepper flakes while cooking the shrimp.
