Low Carb Chicken Zucchini Stir Fry

Ingredients:

  • 1 lb chicken breast, sliced
  • 2 zucchinis, sliced
  • 1 packet of Qetoe Low Carb Rice (prepared according to package instructions)
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce
  • 1 tsp sesame oil
  • 1/2 tsp ginger, minced
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)

Instructions:

  1. Cook Qetoe Rice: Prepare the Qetoe Low Carb Rice according to the package instructions and set aside.

  2. Cook the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the sliced chicken and cook until browned and cooked through.

  3. Add Aromatics and Veggies: Add minced garlic, ginger, and sliced zucchinis to the skillet. Sauté for a few minutes until the zucchini is tender-crisp.

  4. Make the Sauce: In a small bowl, mix the soy sauce and sesame oil. Pour the sauce over the chicken and zucchini, stirring to coat evenly.

  5. Combine with Qetoe Rice: Add the prepared Qetoe Low Carb Rice to the skillet. Toss everything together and cook for 2-3 minutes to let the flavors combine.

  6. Season and Serve: Season with salt and pepper to taste. Serve hot, garnished with chopped green onions.
