Baked Chicken with Zucchini and Tomato Medley
Ingredients:
- 2 boneless, skinless chicken thighs
- 1 large zucchini, sliced into rounds
- 2 medium tomatoes, chopped
- 1/4 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil spray
Instructions:
- Prepare the Baking Dish: Preheat the oven to 200°C (400°F). Grease a baking dish with olive oil spray.
- Layer the Ingredients: Place the chicken thighs in the baking dish. Season with salt, pepper, and Italian seasoning. Scatter zucchini slices and chopped tomatoes around the chicken.
- Add Cheese: Sprinkle grated Parmesan over the chicken and vegetables.
- Bake: Bake for 25–30 minutes until the chicken is cooked through and the vegetables are tender. Serve hot.
