This Low Carb Mushroom Risotto recipe is one of our favourite go to comfort food. It's creamy and super delicious, but usually...very high in carbs. This recipe uses the Qetoe rice as an alternative which has 60% less carbs than normal rice! Lets start cooking!
Ingredients:
1. 200g of Mushrooms
2. 1 chopped Onions
3. Olive oil
4. 250mL of chicken stock
5. 1 Packet of Qetoe Low Carb Rice
6. Chopped parsley
7. 4 tablespoon of butter
8. Parmesan
Directions:
1. Heat saucepan and add olive oil
2. Brown the onions, add mushrooms and the 4 tablespoon of butter
3. Add the Packet of Qetoe rice and mix it with the onions and mushrooms.
4. Add the chicken stock and let it simmer for 8-10mins. (Add white wine or water if its getting too dry.)
5. Add loads of Parmesan to your liking and finally a sprinkle of parsley!
