Low Carb Creamy Chicken Alfredo Penne Pasta
Ingredients
- 2 boneless, skinless chicken breasts (about 1 pound)
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 1 tablespoon vegetable oil
- 200g Qetoe Penne
- 2 tablespoons butter
- 2 tablespoons garlic, minced
- 1 tablespoon all-purpose flour
- 1 cup heavy cream
- ½ cup chicken broth (or reserved pasta water)
- ¼ cup freshly grated Parmesan cheese
- ¼ teaspoon salt (or to taste)
- ¼ teaspoon ground black pepper (or to taste)
- 1 teaspoon fresh parsley (optional, for garnish)
Instructions
-
Cook the Qetoe Penne:
- Bring a large pot of salted water to a boil. Add the Qetoe Penne and cook according to the package instructions. Drain and set aside.
-
Prepare the Chicken:
- Pat the chicken breasts dry with a paper towel. Season both sides with salt and pepper.
- Heat the vegetable oil in a large skillet over medium-high heat. Once hot, add the chicken breasts.
- Cook for 6-8 minutes per side until golden brown and cooked through (internal temperature of 165°F/74°C).
- Remove the chicken from the skillet, slice into ½-inch strips, and cover with aluminum foil to keep moist.
-
Make the Sauce:
- In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Stir in the flour, cooking for 1 minute to form a thick paste.
- Gradually whisk in the heavy cream and chicken broth (or reserved pasta water), stirring constantly until the sauce is smooth.
- Add Parmesan cheese and simmer for 2-3 minutes until the sauce thickens. Season with salt and pepper to taste.
-
Combine and Serve:
- Add the cooked Qetoe Penne and chicken strips back into the skillet, tossing to coat everything evenly in the sauce.
- Garnish with fresh parsley if desired.
-
Enjoy:
- Serve immediately and enjoy this creamy, low-carb pasta dish!
Notes:
- Shredded Chicken Alternative: Skip cooking the chicken breasts and use 3 cups of pre-cooked shredded chicken. Add it to the sauce and pasta at the end to heat through.
- Storing Leftovers: Allow the pasta to cool to room temperature before storing in an airtight container in the fridge for up to 3-4 days.
- Reheating: Reheat gently on the stovetop over medium-low heat, adding a splash of water or broth if the sauce has thickened. Alternatively, use the microwave in 30-second intervals until warmed through.
