Ingredients

  • 2 boneless, skinless chicken breasts (about 1 pound)

  • 200g Qetoe Penne
  • 2 tablespoons butter
  • 2 tablespoons garlic, minced
  • 1 tablespoon all-purpose flour
  • 1 cup heavy cream
  • ½ cup chicken broth (or reserved pasta water)
  • ¼ cup freshly grated Parmesan cheese
  • ¼ teaspoon salt (or to taste)
  • ¼ teaspoon ground black pepper (or to taste)
  • 1 teaspoon fresh parsley (optional, for garnish)

Instructions

  1. Cook the Qetoe Penne:

    • Bring a large pot of salted water to a boil. Add the Qetoe Penne and cook according to the package instructions. Drain and set aside.
  2. Prepare the Chicken:

    • Pat the chicken breasts dry with a paper towel. Season both sides with salt and pepper.
    • Heat the vegetable oil in a large skillet over medium-high heat. Once hot, add the chicken breasts.
    • Cook for 6-8 minutes per side until golden brown and cooked through (internal temperature of 165°F/74°C).
    • Remove the chicken from the skillet, slice into ½-inch strips, and cover with aluminum foil to keep moist.
  3. Make the Sauce:

    • In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
    • Stir in the flour, cooking for 1 minute to form a thick paste.
    • Gradually whisk in the heavy cream and chicken broth (or reserved pasta water), stirring constantly until the sauce is smooth.
    • Add Parmesan cheese and simmer for 2-3 minutes until the sauce thickens. Season with salt and pepper to taste.
  4. Combine and Serve:

    • Add the cooked Qetoe Penne and chicken strips back into the skillet, tossing to coat everything evenly in the sauce.
    • Garnish with fresh parsley if desired.

Notes:

  • Shredded Chicken Alternative: Skip cooking the chicken breasts and use 3 cups of pre-cooked shredded chicken. Add it to the sauce and pasta at the end to heat through.
